Our Values
Peace of Mind at Your Table
We believe our customers deserve to know exactly where their food comes from. We strive to bring you the highest quality meat by openly sharing how our animals are raised and cared for every day on the ranch. To us, transparency is the key to peace of mind.
A Natural Environment
We value our livestock and honor their natural instincts to live outdoors, graze, and herd together. We prioritize low-stress handling and provide our cattle with a calm, natural environment from start to finish.
Honoring the Land
We focus on intentional stewarding practices that put the health of our natural resources first. By caring for our land, we cultivate higher-quality grasses and help our soils hold more water and vital nutrients.
This commitment to the land does more than just protect our environment—it directly results in a more nutrient-dense, flavorful meat and a consistently delicious product for your family. At Marcum Farms, we aren't just raising cattle; we’re stewarding the land to bring the very best of the ranch to your table.
Our Practices
A Century of Experience
Our family lives on and works this ranch every day. We’ve spent 100 years evolving our cattle practices to deliver the best possible product. By constantly monitoring their care and environment, we ensure our animals have exactly what they need to thrive.
Quality Nutrition
Our cattle graze on a mix of native Oklahoma prairie and improved pastures. To ensure the highest-quality beef, we work closely with an animal nutritionist to deliver the best possible feed, including locally sourced grain and forage. This balanced approach is what builds the consistent flavor and marbling our customers expect.
A Low-Stress Environment
We believe that the environment is just as important as the feed. We provide a low-stress setting for our animals from start to finish. Staying attentive to their needs and keeping them in a calm, natural environment results in a better, more consistent product for your table.
Small-Batch Processing
When it’s time, our beef is processed in a USDA-inspected facility, one animal at a time. Each cut is done by hand, then wrapped and labeled so you always know exactly where your beef comes from, right down to the specific animal.
Dry-Aged for Flavor
Every beef cut is dry-aged for 14-21 days. This traditional process allows the beef to develop a deep, natural flavor and added tenderness that you simply can't find in a grocery store.
Our Promise
-
Healthy Soils
We work to be the best stewards of our land by working with nature to build organic matter and resilience in the soil. This foundation allows our pastures to hold more water and vital nutrients, ensuring our native Oklahoma grasses flourish through every season.
-
Planned Grazing
The cattle are rotated to different parts of the pasture to keep the grasses healthy. We focus on letting the grass recover to return more carbon to the soil, resulting in healthy, natural prairie grasses for our cattle to consume.
-
Healthy Animals
Healthy soil translates to high-nutrition grass, but our stewardship and care are the big differences. Our animal husbandry practices lead to healthier animals that are content and happy because of the attention and care they receive.
